“再忙也要喝杯咖啡”,這句話不僅僅說出了,現代人很忙、很辛苦,連自己的休閒時間都被壓縮,但是喝咖啡卻是不能錯過的美好時刻。在談公事時喝杯咖啡,讓僵硬 的話語帶點輕鬆的氣氛。上班的時候喝杯咖啡,讓思緒更加清晰、工作更有效率。約朋友見面,喝個咖啡,打開幸福的話夾子加深彼此的情誼。自己一個人喝,享受 片刻的悠閒,靜靜的品味人生!咖啡不但可以舒緩一整天緊繃的情緒,迷人的香氣更帶給我們愉悅的心情!</div>

就因爲這麼好,或許你也發現,身邊多了好多家的咖啡店,咖啡鋪,販售著許許多多,各式各樣的“意式咖啡”,其實所謂“意式咖啡”,廣義來說就是,用有壓力的 咖啡機,所萃煮出來的咖啡,都叫“意式咖啡”,其中以“espresso濃縮咖啡”爲最主要的角色,它的味道濃厚,一般的意式咖啡都拿它當基底,而加入不 同比例的材料,做成不同口感的咖啡飲品,就像是大家常聽到的cappuccino卡布奇諾,latte拿鐵,就是espresso加入不同比例的牛奶而做 成。像我們這次的主題就是談cappuccino 咖啡的拉花。</div>

拉花就是以熟練的技巧把打發後的奶泡,倒進espresso中,以晃動讓咖啡和牛奶交錯產生花紋,就叫拉花coffee art,拉花在近年來越來越受到注重,好多人以會不會拉花這件“事”來當成,這位吧檯手有沒有經驗,或是能力不強的關鍵,所以造成吧檯手把拉花當成首要 練習的項目!因爲如果這杯咖啡拉花,客人在還沒喝之前一定會“哇”一聲,驚歎你的功夫了得,是啊,誰會不喜歡把咖啡做的美美的,讓人有視覺上的美感呢?但是除了看起來好看之外,還有沒有我可以去注意的地方呢?好多人都問我,咖啡加了奶還喝不喝得出來好壞,我說,當然可以,只是要去品他咖啡的細緻度上會有難 度,但是要判別咖啡豆的好壞,其實不難。看過有一些吧檯手,爲了可以拉出圖案,把奶泡打的稀稀地而失去口感;爲了拉花好看,拿焙焦的豆子來用,說顏色黑白 比較分明;更離譜的是他告訴我,加了牛奶客人喝不出來,好看就對了!客人真的無法分辦咖啡的好壞嗎?</div>

品咖啡的經驗告訴我,只要這杯咖啡的口感是重的,而且重到有“負擔”就不是好咖啡,太濃烈、苦味不散、酸度太過刺激,澀感強、喝完有焦味在口腔裏…等,都 不是一杯好咖啡該有的表現,只要有任何一項出現,你就可以知道這不是一杯完美的咖啡囉,當然加了牛奶,有好多的口感會被修飾掉,但是隻要你別喝太快,多感 受一下,缺點依然無所遁行,逃不出我們的舌間,慢慢喝你也一定可以有所體悟的!</div>

有人問:道底拉花會不會對這咖啡的口感有影響呢? 不是就把牛奶倒進咖啡裏,真的會有不一樣嗎?</div>

我做了一次測試,跟大家一起體驗:</div>

條件 180cc的玻璃杯*二隻 2同一壺打發的鮮奶,奶泡分配平均*二杯 3同一道萃取的espresso單份*二杯</div>

作法:</div>

A:把咖啡和牛奶及奶泡充份混合並做“拉花”動作。</div>

B:把奶泡先用擋住,混合牛奶和咖啡以後再放入奶泡</div>

看起來有圖樣呈現,裝飾性佳,視覺漂亮。賣相佳</div>

沒有特別的花樣,白色部份較多,不會特別去注意。</div>

香氣表現:</div>

巧克力香,脂質的香明顯,直接可聞到奶泡上creama的味道,感覺起來一聞就可以感受到咖啡香氣。</div>

牛奶糖香,核果香,奶味較重,反而咖啡味穩定的藏在奶香後面,柔柔的不會感受到強烈的味道。</div>

奶泡口感:</div>

</div>
<div>
嚐起來,奶泡入口容易化開,但是苦味稍重,是creama 和奶泡交錯成型時,creama 和奶泡結合帶出來的口感。</div>

嚐起來,入口甜度高,奶泡Q,是有口感的奶泡,苦度較低,是奶泡直接和我們的口腔接觸,沒有太多Creama帶出的濃厚奶泡口感</div>

整體表現:</div>

A杯喝入口,首先是奶泡和creama碰到雙脣, 一起滑入口中,有厚實的咖啡香,很明顯的苦度和下層咖啡牛奶融合,降低了許多;核果奶香,這個時侯會出現,甜度也跟著提高,但是有一個比較嚴重的問題,較 不濃郁,醇度不足!(拉花主要用奶泡和creama交錯成形,因此拉花的同時,會有一部份的espresso是擱在奶泡上的,比較起來,下層醇度不夠,也 較不濃郁)</div>

B杯剛入口有奶泡的甜度接觸味蕾,接下來纔有較豐厚的風味慢慢的填滿原本較輕的感受,咖啡的口感增加,突顯了巧克力香氣,原本奶味重的問題被底下的咖啡順過,濃度也提升!( 上層有濃郁奶香,奶泡的口感乾淨,綿細;而咖啡下層擁有較飽滿的咖啡口感,香氣長而口感濃厚。一滑入口中是表現牛奶的細緻和香甜,當咖啡跟著入口的同時,也把厚實的咖啡口感推進我們的味蕾,是一波一波的增加,不容易讓人發現口感上的負擔)</div>

因爲上述的口感,讓我們明白——</div>

如果今天我們做的咖啡是要提供給,極需賣相的飲品市埸,提供拍照,我們就必須選擇把咖啡做拉花,因爲視覺表現上它很美,自然晃動的線條也是表現咖啡師熟練技巧的一種方式,每每有不同的圖飾也會讓人有想喝一口的衝動,如果你想做的是這一部份,拉花咖啡是屬於這的!</div>

如果你是想要做一杯可以讓人品嚐到層次的咖啡,提供給想喝到柔和口感的人,或許他沒有搶眼的賣相,也沒有華麗的裝飾,當然也少了咖啡師炫技的機會, 如果品嚐到咖啡美味是你重視的,那不拉花的咖啡屬於這的!</div>

話說回來那一個咖啡師不想炫技啊!如果這位咖啡師是真的愛咖啡,他會選擇好的咖啡豆,把espresso萃取完美,還有把奶泡打的綿細,這也是GEORGE HOUSE一直以來不變的原則,只求咖啡好,其餘免談。下次如果有兩全其美,魚掌兼得的方法,請告訴我吧。</div>

品完了這二種咖啡,口感告訴我們,一模一樣的材料,用不一樣的方法調合,居然會有不一樣的呈現結果,無論是視覺、香氣、口感,這到底還是不一樣,讓跟我一 起試咖啡的學生們驚訝不已;相同的也提醒我們吧檯工作人員,咖啡是一種細緻的飲品,如果所用的咖啡豆已是穩定,調配不同還是會有不一樣的口感出現喔!</div>
