在看完由2017年臺灣咖啡衝煮大賽季軍,目前在木白甜點咖啡店任職的謝庭欣爲大家示範衝煮後,大叔先幫各位整理出她的衝煮參數,再來說明。
・咖啡粉量18 公克(細研磨)
・衝煮水溫93℃
・兩段式注水,總時間3 分鐘
・總水量250 毫升,粉水比約1:14。
大叔在之前的文章裏就介紹過兩種法式濾壓壺衝煮方法,而謝庭欣所使用的是比較接近丸山珈琲的方式,但最大的差別在於她將咖啡豆做了極細研磨的處理。這樣的方式與一般使用法式濾壓壺是截然不同的,是利用極細研磨的粉末,來達到粒徑一致的目的。一開始有點擔心這樣的方式,會不會造成咖啡渣過多的狀況,但實際測試時,發現其實過濾效果還不錯,跟使用粗研磨的手法差不多。
在製作冰歐蕾咖啡的過程,我們將萃取完成的咖啡直接倒入冰塊,加入牛奶。如果是要品嚐單品咖啡的朋友,不妨再加一道手續,就如同謝庭欣在比賽中所採用的方式。
