咖啡雖然源自歐美,但是傳進日本後,日本人以特有的職人精神投注於咖啡,從豆子的選擇、烘焙到衝煮,關注細節、近乎苛求,也就是職人的“こだわり”。銀座的“琥珀咖啡”,開業已經六十七年,就是咖啡職人精神的最佳體現。</div>

“我天生就喜歡探究事物的本質。”</div>

說這句話的不是哲學家,而是銀座八丁目琥珀咖啡的關口一郎,他所說的“事物”指的是咖啡。他出生於一九一四年,高齡超過一百歲,雖已將咖啡館交給外甥林不二彥管理,但一星期之中仍然有幾天會坐在店裏。他在日本烘焙咖啡界有著無可取代的地位,對他而言,唯一的念頭是如何把咖啡煮好。</div>

“一生唯一念。”他說。關口一郎畢業於早稻田大學工學部,他從工學當中學到如何掌握事物的本質,然後透過自己的熱忱,創造屬於自己的咖啡風味。</div>

從豆子就可以瞭解關口一郎的用心。一般而言,歐美咖啡愛好者喜歡的是“新豆”(New Crop),由於水分含量較多,味道與香氣較爲豐富,被視爲較優異的咖啡豆。日本人則喜歡“老豆”(Old Crop ),採收超過兩年以上的咖啡生豆,這種含水量較少的豆子,味道與風味都比較清淡。</div>

琥珀咖啡不只使用老豆,還使用所謂的“陳年咖啡豆”(Aged Coffee )。這種咖啡豆需要放在溼度和溫度一定的環境,在這個講求快速的時代,得來十分不易。琥珀咖啡最爲貴重的豆子,年份甚至高達四十年。陳年咖啡豆就好像陳年的酒,帶著成熟而醇厚的風味,時間已經去除豆子中多餘的酸性與水分。</div>

除了對於豆子的堅持,關口一郎發現將豆子研磨成粉末,粗細度無法相同,一些漏網的咖啡細粉(日文稱爲微粉)在衝煮咖啡的過程中會被過度萃取,導致咖啡過於酸苦。爲解決細粉的問題,學工程的他發揮所長,研發與一般碾磨式磨豆機不同的機器,利用旋轉離心力,使咖啡粉達到一定粗細程度時被甩出濾網,將細粉量減到最低。</div>

但是,關口一郎發明的磨豆機所研磨的咖啡粉並不能用虹吸式衝煮,因爲對於陳年老豆而言,這樣的煮法無法將豆子的醇厚展現出來,只能以手衝方式讓水一點一滴穿過層層粉末,透過濾網滴出琥珀色的汁液。</div>

琥珀咖啡坐落於銀座後巷當中,相較於中央通的繁華與熱鬧(早上是逛精品店的人潮,夜晚則是百花齊放的酒廊),更顯得特別。咖啡館的裝潢讓人很容易聯想到咖啡:深咖啡色的木門、懷舊的空間佈置、色彩鮮豔的幾何形小磁磚搭配木質牆面。店內的空間分成吧檯與單獨座位區,深紅色的沙發配上實木吧檯,散發溫暖、沉穩又典雅的感覺。</div>

招牌寫著“珈琲だけの店”,英文則是Coffee only, own roast, and hand drip ─只賣咖啡、自家烘焙、堅持手衝。這樣的宣示就是日本咖啡與歐美咖啡不同之處。歐美的精品咖啡主要流行單一品種,而日本則流行咖啡職人們的混和咖啡。每一家咖啡館主人選擇最符合自身風格的混和方式,僅此一家、別無分號,也無法複製。</div>

手衝咖啡是琥珀咖啡的特色,堅持一次僅研磨一杯咖啡豆分量的咖啡粉,不會爲了方便先研磨起來擺著,因爲豆子變成粉末之後,會因爲空氣溼度產生味道的變化。這裏一次只爲一位客人準備他的豆子、燒煮他的熱水、手衝他的咖啡,在求新、求快、求便利的時代之中,這樣的咖啡彌足珍貴。看著現在的店長林不二彥提著手衝壺,仔細且精準地控制水的流量,那股專注的神情,使人很自然地與職人精神連結在一起,他繼承關口一郎的職志,希望每位享用咖啡的人都能感受到他所投注的熱忱與心意。</div>
